Make the Crust:
In a large bowl, mix flour, salt, and sugar.
Add the cold butter and work it in with your hands or a pastry cutter until it resembles coarse crumbs.
Add the cold water a little at a time until the dough just comes together.
Divide into two discs, wrap in plastic, and chill for at least 1 hour.
Prepare the Filling:
In a large bowl, combine sliced apples with sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla.
Let the mixture sit for 15 minutes to draw out the juices.
Assemble the Pie:
Roll out one dough disc and fit it into a 9-inch pie pan.
Fill with the apple mixture.
Roll out the second disc and cut into strips to form a lattice pattern on top.
Bake:
Brush the lattice top with the egg and milk mixture.
Sprinkle with coarse sugar if desired.
Bake in a preheated oven at 375°F (190°C) for 45–50 minutes, or until golden brown and bubbly.
