Loaded Mashed Potato Cups Recipe

Instructions:
Preheat oven to 375°F (190°C).

Prepare the mashed potatoes: If using leftover mashed potatoes, you may want to warm them slightly to make mixing easier.

Mix in half of the cheese, the egg (if using), salt, pepper, and sour cream (if desired).

Grease a muffin tin or use muffin liners.

Scoop the mashed potato mixture into each muffin cup, filling to the top and smoothing slightly.

Top each cup with the remaining shredded cheese, crumbled bacon, and a sprinkle of chives.

Bake for about 15–20 minutes, or until cheese is melted and the tops are slightly golden.

Cool for 5 minutes before serving. They should pop out easily and hold their shape.
