Preheat oven to 190°C (375°F).
Heat olive oil in a large skillet over medium heat. Sauté the onion for 3 to 4 minutes until softened. Add the garlic and zucchini, and season with salt, pepper, and thyme. Cook for 5 to 6 minutes until the zucchini is just tender. Remove from heat.
In a bowl, whisk the eggs with the cream, half of the Gruyère cheese, and all of the Parmesan cheese.
Arrange the zucchini mixture in a greased or oiled baking dish. Pour the egg and cream mixture evenly over the top. Sprinkle with the remaining Gruyère cheese.
Bake for 25 to 30 minutes, until golden brown and bubbly.
Let cool for a few minutes before serving. Garnish with fresh parsley.
