Spinach and ricotta croquettes

Prepare the spinach:

Sauté the spinach in a pan (with a little chopped garlic if desired) until wilted and the water has evaporated.

Drain thoroughly and chop finely.

Prepare the filling:

In a bowl, combine the chopped spinach, ricotta, egg, and Parmesan.

Season with salt, pepper, and a pinch of nutmeg.

If the mixture is too soft, add a little breadcrumbs to firm it up.

Shaping the croquettes:

Shape them into balls or small sausages with lightly floured hands.

Roll each croquette in the flour, then in a little beaten egg (optional), and finally in the breadcrumbs.

Cooking:

Heat oil in a frying pan.

Brown the croquettes on each side until crispy.

Drain them on paper towels.

You can bake them in the oven (180°C for 20-25 minutes) for a lighter version.

Serve them with a homemade tomato sauce or a yogurt and lemon sauce.
