Ingredients:
🐑 1 leg of lamb (about 2 kg)
🧄 4–5 cloves garlic
🌿 1 bunch fresh herbs (rosemary, thyme, parsley)
🫒 3 tbsp olive oil
🧂 Salt & freshly ground black pepper
🥔 1.5 kg potatoes (baby or waxy varieties like Charlotte)
🫒 2 tbsp olive oil (for potatoes)
🌶️ 1 tsp paprika (optional)
Preparation:
1️⃣ Prepare the lamb
Preheat oven to 180°C / 350°F (fan-assisted if possible).
Make small incisions in the lamb with the tip of a knife.
Peel garlic cloves and slice them thinly. Insert slices into the incisions.
Finely chop the herbs and mix with olive oil, salt, and pepper.
Rub the lamb generously with this fragrant mixture.
2️⃣ Prepare the potatoes
Wash potatoes and cut them in half (or into quarters if large).
Toss with olive oil, salt, pepper, and paprika (if using).
