Place lamb in a roasting dish.
Arrange potatoes around it.
Roast for 1.5 to 2 hours, depending on lamb size.
Baste the meat and potatoes regularly with the cooking juices so they stay moist and flavorful 😋.
Check doneness by piercing the meat (should be pink inside, or to your preference).
4️⃣ Rest & serve
Let lamb rest for 10–15 minutes under foil before carving.
Serve slices alongside golden roasted potatoes.
