100 g (3.5 oz) Greek yogurt πΆ
1 tbsp (10 g) olive oil π«
1 small cucumber (120 g) π₯
1 shallot (50 g) π§
1 garlic clove π§
3 sprigs of chives (10 g) π±
3 sprigs of flat-leaf parsley (10 g) πΏ
A few mint leaves (5 g) π

Wash and pat dry the cucumber. Cut it into small cubes β leave the thin skin on for color and extra crunch.
2οΈβ£ Drain the cucumber π§
Place the cubes in a colander, sprinkle with a pinch of salt, mix, and let sit for 5 minutes so it releases excess water.
3οΈβ£ Chop the aromatics πΏπͺ
Finely mince the shallot, garlic, chives, parsley, and mint until fragrant and colorful.

In a large mixing bowl, whisk together the fresh cheese, Greek yogurt, and olive oil until smooth and velvety.
