🛒 Ingredients
🥧 Shortcrust pastry: 250 g
🥛 Whole milk: 1 litre
🍬 Granulated sugar: 150 g
🥚 Whole eggs: 4
🥚 Egg yolks: 2
🌽 Cornstarch (Maïzena): 100 g
🌿 Vanilla bean: 1 (or 2 tbsp pure vanilla extract)
🔪 Step-by-Step Preparation
1️⃣ Preheat the oven 🔥
Preheat your oven to 180°C (350°F), using conventional heat (no fan).
2️⃣ Prepare the pastry 🥧
Line a 26 cm (10-inch) tart tin or springform pan with the shortcrust pastry.
Gently prick the base with a fork to prevent puffing during baking.
Chill in the fridge while you prepare the filling ❄️.
3️⃣ Heat the milk 🥛
Pour the milk into a saucepan.
Split the vanilla bean lengthwise, scrape out the seeds, and add both seeds and pod to the milk.
Bring to a boil, then remove from heat.
Cover and let the vanilla infuse for 10 minutes for maximum flavor 🌼.
4️⃣ Make the custard base 🍯
In a large mixing bowl, whisk together the whole eggs, egg yolks, and sugar until pale and fluffy ✨.
Sift in the cornstarch (to avoid lumps) and mix well until smooth.
