👾 Spinach Monster Fritters with Garlic Yogurt Sauce 🥬🧄✨

🛒 Ingredients (Serves 4)
🟢 For the fritters:
🥬 Fresh or frozen spinach – 150 g
🌾 All-purpose flour – 120 g
🥚 Eggs – 2
🥛 Milk – 80 mL (8 cl)
🧀 Grated cheese (Emmental or Parmesan) – 50 g
🧂 Salt & pepper – to taste
🛢️ Frying oil – enough for shallow frying
🫒 Black olives (for the monster eyes 👀) – a few slices
🥣 For the yogurt sauce:
🥛 Plain yogurt or Greek yogurt – 1 pot (125 g)
🧄 Garlic (minced or powder) – ½ tsp
🌿 Fresh chives or mint (finely chopped) – 1 tbsp
🧂 Salt & pepper – to taste
👨🍳 Step-by-Step Preparation
🥬 Prepare the Spinach
If frozen: thaw completely, then squeeze out excess water.
If fresh: sauté in a pan for 2 minutes without oil until wilted.
Roughly chop the cooked spinach.
🧪 Make the Fritter Batter
In a large bowl 🥣, mix flour, eggs, milk, grated cheese, salt, and pepper.
Fold in the chopped spinach.
Let the batter rest for 10–15 minutes (optional, for fluffier fritters).
🔥 Cook the Fritters
Heat a thin layer of frying oil in a skillet.
Drop spoonfuls of batter into the pan, shaping into small fritters.
Fry for 2 minutes per side, until golden brown & crispy.
Drain on paper towels 🧻.
While still warm, decorate each fritter with two olive slices to make fun monster eyes 👀👾.
