π Ingredients (Serves 4)
π’ For the fritters:
π₯¬ Fresh or frozen spinach β 150 g
πΎ All-purpose flour β 120 g
π₯ Eggs β 2
π₯ Milk β 80 mL (8 cl)
π§ Grated cheese (Emmental or Parmesan) β 50 g
π§ Salt & pepper β to taste
π’οΈ Frying oil β enough for shallow frying
π« Black olives (for the monster eyes π) β a few slices
π₯£ For the yogurt sauce:
π₯ Plain yogurt or Greek yogurt β 1 pot (125 g)
π§ Garlic (minced or powder) β Β½ tsp
πΏ Fresh chives or mint (finely chopped) β 1 tbsp
π§ Salt & pepper β to taste
π¨βπ³ Step-by-Step Preparation
π₯¬ Prepare the Spinach
If frozen: thaw completely, then squeeze out excess water.
If fresh: sautΓ© in a pan for 2 minutes without oil until wilted.
Roughly chop the cooked spinach.
π§ͺ Make the Fritter Batter
In a large bowl π₯£, mix flour, eggs, milk, grated cheese, salt, and pepper.
Fold in the chopped spinach.
Let the batter rest for 10β15 minutes (optional, for fluffier fritters).
π₯ Cook the Fritters
Heat a thin layer of frying oil in a skillet.
Drop spoonfuls of batter into the pan, shaping into small fritters.
Fry for 2 minutes per side, until golden brown & crispy.
Drain on paper towels π§».
