600 g carrots (about 6 medium carrots) 🥕
30 g grated Parmesan cheese 🧀
40 g breadcrumbs (or panko for extra crunch) 🍞
1 tbsp (15 ml) olive oil 🫒
½ tsp (2 g) sweet paprika 🌶️
¼ tsp (1 g) garlic powder 🧄
1 tsp (5 g) fine salt 🧂
½ tsp (2 g) ground black pepper ⚫
10 g fresh flat-leaf parsley, finely chopped (about 2 tbsp) 🌿
🍴 Step-by-Step Instructions
🔪 1. Prepare the Carrots
Wash and peel 600 g of carrots.
Cut into sticks about 1 cm thick and 7 cm long, so they resemble fries (🥕).
💧 2. Blanch and Dry
Bring a pot of salted water to a boil. Add carrot sticks and blanch for 2 minutes to slightly soften.
Drain and immediately plunge into a bowl of ice water to stop cooking. ❄️
Drain again and dry thoroughly with a clean towel or paper towels (🧻). This step ensures they get extra crispy!
🥣 3. Prepare the Coating
In a bowl, mix together:
40 g breadcrumbs
30 g grated Parmesan
2 g paprika
1 g garlic powder
5 g salt
2 g black pepper
