🥒🌿 Fresh Herb & Cucumber Spread

🛒 Ingredients
150 g (5.3 oz) fresh cheese (like faisselle or petit suisse) 🧀

100 g (3.5 oz) Greek yogurt 🍶

1 tbsp (10 g) olive oil 🫒

1 small cucumber (120 g) 🥒

1 shallot (50 g) 🧅

1 garlic clove 🧄

3 sprigs of chives (10 g) 🌱

3 sprigs of flat-leaf parsley (10 g) 🌿

A few mint leaves (5 g) 🍃

Salt 🧂 & freshly ground black pepper 🌑

👩‍🍳 Preparation Steps
1️⃣ Prep the cucumber 🥒
Wash and pat dry the cucumber. Cut it into small cubes — leave the thin skin on for color and extra crunch.

2️⃣ Drain the cucumber 💧
Place the cubes in a colander, sprinkle with a pinch of salt, mix, and let sit for 5 minutes so it releases excess water.

3️⃣ Chop the aromatics 🌿🔪
Finely mince the shallot, garlic, chives, parsley, and mint until fragrant and colorful.

4️⃣ Make the creamy base 🥣
In a large mixing bowl, whisk together the fresh cheese, Greek yogurt, and olive oil until smooth and velvety.

5️⃣ Combine the flavors 🌸
Fold in the chopped shallot, garlic, and herbs. Add the well-drained cucumber cubes and stir gently to mix.

6️⃣ Season & taste 🍋
Lightly salt, add a generous grind of pepper, taste, and adjust to your liking.
