150 g (5.3 oz) fresh cheese (like faisselle or petit suisse) ๐ง
100 g (3.5 oz) Greek yogurt ๐ถ
1 tbsp (10 g) olive oil ๐ซ
1 small cucumber (120 g) ๐ฅ
1 shallot (50 g) ๐ง
1 garlic clove ๐ง
3 sprigs of chives (10 g) ๐ฑ
3 sprigs of flat-leaf parsley (10 g) ๐ฟ
A few mint leaves (5 g) ๐
Salt ๐ง & freshly ground black pepper ๐
๐ฉโ๐ณ Preparation Steps
1๏ธโฃ Prep the cucumber ๐ฅ
Wash and pat dry the cucumber. Cut it into small cubes โ leave the thin skin on for color and extra crunch.
2๏ธโฃ Drain the cucumber ๐ง
Place the cubes in a colander, sprinkle with a pinch of salt, mix, and let sit for 5 minutes so it releases excess water.
3๏ธโฃ Chop the aromatics ๐ฟ๐ช
Finely mince the shallot, garlic, chives, parsley, and mint until fragrant and colorful.
4๏ธโฃ Make the creamy base ๐ฅฃ
In a large mixing bowl, whisk together the fresh cheese, Greek yogurt, and olive oil until smooth and velvety.
5๏ธโฃ Combine the flavors ๐ธ
Fold in the chopped shallot, garlic, and herbs. Add the well-drained cucumber cubes and stir gently to mix.
