9 to 12 lasagna sheets (pre-cooked or to cook, depending on package) ๐
300 g (10 oz) mushrooms (button mushrooms or a forest mix), thinly sliced ๐
200 g (7 oz) cooked ham (white or smoked), cut into strips or cubes ๐
250 g (9 oz) mozzarella cheese, grated or sliced ๐ง
50 g (2 oz) parmesan cheese, grated ๐ง๐ง
20 g (1.5 tbsp) butter ๐ง
1 tbsp olive oil ๐ซ
1 shallot, finely chopped ๐ง
1 garlic clove (optional) ๐ง
1 tbsp fresh parsley, chopped ๐ฟ

50 g (1.5 tbsp) butter ๐ง
50 g (1.5 tbsp) flour ๐พ
500 ml (2 cups) milk ๐ฅ
100 ml (ยฝ cup) heavy cream ๐ฅฅ
Salt ๐ง, pepper ๐ถ๏ธ, nutmeg โจ

1๏ธโฃ Prepare the Mushroom Filling
Heat butter ๐ง with olive oil ๐ซ in a large skillet.
Add the shallot ๐ง , then the mushrooms ๐ and garlic ๐ง (if using).
Cook until all the water evaporates and mushrooms are golden.
