Strawberry Crunch Poke Cake



Tastes just like those childhood strawberry shortcake ice cream bars, creamy, soft, and perfectly crunchy on top!

Ingredients
Cake

1 box white cake mix (plus ingredients on box)

1 box (3 oz) strawberry gelatin

1 cup boiling water

1 cup cold water

Frosting

8 oz cream cheese, softened

1½ cups heavy cream

1 cup powdered sugar

1 tsp vanilla

Crunch Topping

18–20 Golden Oreos, crushed

¼ cup melted butter

1 box (3 oz) dry strawberry gelatin powder

Fresh strawberries (optional)

Instructions

Bake the cake

Preheat to 350°F, grease a 9×13 pan.

Prepare and bake cake 22–25 mins or until a toothpick comes out clean.

Cool completely, then poke holes all over with a fork.

Add the strawberry mixture

Mix gelatin + boiling water until dissolved.

Stir in cold water.

Pour evenly over cake.

Chill 4 hours or overnight.

Make frosting

Beat cream cheese until smooth.

Whip cream, powdered sugar & vanilla until stiff peaks form.

Fold in cream cheese. Spread over cake.

Make crunch topping

Combine crushed Oreos, melted butter & dry gelatin powder.

Sprinkle over frosting and gently press.

Add fresh berries if you like!

Chill & serve

Refrigerate leftovers. Topping softens slightly over time but stays deliciou
